Amaranth Green Leaf has round, light green leaves and white stems which are very tender and and can be used as a leaf vegetable, salad green, sprout or microgreen.
The protein rich seeds can be eaten as a grain, perfect for vegetarians and vegans. This plant is a delicious powerhouse containing more iron and calcium than regular spinach.
In the hot summer months, when growing spinach is near impossible, amaranth thrives. Easy to grow and tolerant of wide-ranging conditions.
Its soft leaves are a great addition to salads and, like spinach, it melts delectably when cooked. Slightly astringent when raw, the greens turn soft and mellow as they cook. It is quick to harvest and will tolerate hot, dry and humid climates.
Amaranth needs full sun and can be grown in almost any well-drained soil besides dense clay. Plant your seeds about 50 cm apart and cover lightly with soil.
Amaranth is drought and heat resistant, so it is only necessary to water once or twice a week during dry periods.
For taller plants, add fertilizer once or twice a year or add compost. Amaranth grows between 1m to 2m tall but with particularly rich soil with plenty of nitrogen and phosphorous, the plants can get to around 3m!
