A favorite with chefs, Amaranth Garnet Red is the most intensely coloured amaranth and produces the best colour in very warm conditions.
The leaves are red tinged on the darkish grey-green surface and a deeper red underneath.
The veins also appear red and the colour intensifies with the heat.
The young leaves are tender and nutritious and have a delicate pea-like flavour all the whilst being a delicious, nutritional powerhouse.
Very popular in Asian cuisine, the leaves can be used at baby leaf stage for salad or garnish, or can be left to mature for steamed vegetable or soups.
Its soft leaves are a great addition to salads and, like spinach, it melts delectably when cooked.
The seeds can also be harvested from mature plants and used as a grain.
Easy to grow and tolerant of wide-ranging conditions and in the hot summer months, when growing spinach is near impossible, amaranth thrives.
It can also be grown as an ornamental with it’s long lasting, blooms presenting on long straight stems, extending upwards in spear like, crimson plumes. Great for beds, borders, mass planting and cottage gardens.
Amaranth needs full sun and can be grown in almost any well-drained soil besides dense clay. Plant your seeds about 50 cm apart and cover lightly with soil.
Amaranth is drought and heat resistant, so it is only necessary to water once or twice a week during dry periods.
For taller plants, add fertilizer once or twice a year or add compost. Amaranth grows between 1m to 2m tall but with particularly rich soil with plenty of nitrogen and phosphorous, the plants can get to around 3m!
